ONE Minute Muffin
- 1/4 cup quick oats
- 1 egg
- 1 drop vanilla extract
- 1 small handful of fruit and/or nuts (almond slices recommended!)
- Sprinkle Stevia
- 1 tablespoon plain soy, coconut or almond milk
Take all ingredients and mix them all up in a coffee mug. Place mixture in the microwave for 1 minute. Watch it carefully since this could overflow. Grab an extra handful of fruit & nuts, munch while it’s cooking!
If the muffin top does not look firm, place back in the microwave 30 seconds at a time. Enjoy!
