ONE Minute Muffin 

  • 1/4 cup quick oats
  • 1 egg 
  • 1 drop vanilla extract
  • 1 small handful of fruit and/or nuts (almond slices recommended!)
  • Sprinkle Stevia
  • 1 tablespoon plain soy, coconut or almond milk 

Take all ingredients and mix them all up in a coffee mug. Place mixture in the microwave for 1 minute. Watch it carefully since this could overflow. Grab an extra handful of fruit & nuts, munch while it’s cooking!

If the muffin top does not look firm, place back in the microwave 30 seconds at a time. Enjoy!
